How can I prevent a search engine index PARTS my page?

I did web design for years and I am always in SEO. I know I can sitemap.xml, robots.txt, and even the web server to stop a spider crawl my site, but what about sharing content on the page that does not really need indexed? I am very concerned with accessibility, so I quite often put a lot of text in the guidance document on the screen to assist the reader.
